Our Shiraz is made from only the finest full-ripe clusters as unripe clusters are removed a month before harvesting. Flavour and colour extractions occur over a fortnight before the fermenting red new wine is tapped. Immediate contact with the cask draws a full array of floral wood Oak spices over the 18 month cooling chamber maturation process.
