Our Sauvignon Blanc’s grapes are imbued with such diverse flavour that harvesting occurs over three separate days in each section of the vineyard block. The grapes are harvested in succession of flavour: commencing with green-fig and progressing to asparagus-litchi as they ripen. The Sauvignon Blanc is kept below 13ºC at optimum temperature and only moved twice by means of gravitation, preferred over pump or filtration to preserve the crisp and vigorous extracts.
Tasting Notes
This zesty Sauvignon Blanc is defined by cutgrass, green pepper, a tinge of green pea and nettle as subtle tropical fruit notes flow on the nose. The palate is mineral and flinty with a crisp mouthwatering lime finish, adding verve to any meal.ACCOMPANIMENTS: Oysters, chicken, seafood pasta and salmon.
